Last week I made this as my dinner/lunch of the week.

I made a few substitutions – turkey instead of beef, can of diced tomatoes in place of half the salsa, more cheese and less sour cream – and a few additions – a zucchini and more chili powder.

I’ve arrived at the point of being confident enough not to follow the recipe, to add and delete ingredients on a whim and to know how to sneak in as many vegetables as I can….

….or I’m just picky.
